Recipe Basic Crepes - cooked only on one side1 can (20 oz.) apple
pie filling 1 cup cubed Cheddar cheese
1/2 cup chopped nuts1/2 teaspoon cinnamon3 tablespoons butter
Directions - Apple Pie Blintz
In a small bowl mix pie filling, cheese, nuts, and cinnamon.
Spoon about 2 tablespoons of the cheese mixture into the center of the
browned side of each crepe. Fold your blintz in thirds (one edge to the center
covering the cheese mixture, then the opposite edge to the center - overlapping in the
middle). At this point, the blintz will resemble a rolled shape. Next,
fold each open end of the blintz to the middle. Blintz should now
resemble a square or pocket shape.
large skillet melt butter. Add folded blintzes, seam side
down, and brown lightly. Turn and brown other side. Serve hot.
Recipe yields about 12 blintzes.
