Oatmeal Muffins Recipe

Turn these oatmeal muffins into oatmeal raisin muffins with the addition of 1/2 cup raisins.

Ingredients:

1 cup oatmeal
1 cup whole-wheat flour
1/3 cup light brown sugar, firmly packed 
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup milk
8 tablespoons (1 stick) unsalted butter,
     warm melted
1 egg, slightly beaten 

Directions - Oatmeal Muffins Recipe:

Position the rack in the center of the oven. Preheat the oven to 400 degrees. Grease a standard 12-muffin pan or line with paper cups.

Combine oatmeal and milk in a large bowl. Cover and let sit in refrigerator for 1 hour. Remove oatmeal mixture from refrigerator and add melted butter, egg, and brown sugar. Stir well. Set aside.

In a medium-sized bowl whisk together flour, baking powder, baking soda, nutmeg and cinnamon. Add dry ingredients to oatmeal mixture. Mix together with a few light strokes, until the dry ingredients are moistened. Do not over mix - the batter should be lumpy.

Pour the oatmeal muffin batter into the muffin cups. Fill cups about two-thirds full with batter. Sprinkle the top of each muffin with cinnamon and sugar before baking.

Bake until a toothpick inserted in 1 or 2 of the muffins comes out clean, 15 to 20 minutes. Let cool for 2 to 3 minutes before removing from the pan.

Recipe yields 12 oatmeal muffins.
