Recipe Dessert Crepes - cooked on one side
1 pint of fresh
1/2 cup sugar
1 package (8 oz.) cream cheese, softened
1/4 teaspoon vanilla extract
2 tablespoons butter
Directions - Strawberry Blintz
and thinly slice berries lengthwise. Sprinkle sliced strawberries
with sugar and set aside.
In a small bowl combine, cream
cheese, powdered sugar, and vanilla until light and fluffy. Gently fold
in about 1 cup of the sliced berries.
Spoon about 2 tablespoons of the cheese mixture into the center of the
browned side of each crepe. Fold your blintz in thirds (one edge to the center
covering the cheese mixture, then the opposite edge to the center - overlapping in the
middle). At this point, the blintz will resemble a rolled shape. Next,
fold each open end of the blintz to the middle. Blintz should now
resemble a square or pocket shape.
large skillet melt butter. Add folded blintzes, seam side
down, and brown lightly. Turn and brown other side. Serve with remaining
strawberries spread over blintzes.
Recipe yields about 18 blintzes.
