Cold Weather Bean Soup
Soak 20 ounces (565 grams) of mixed dried beans in cold water overnight.
Thoroughly rinse and drain the beans. Simmer them in 3 quarts (3 liters) of fresh water for one hour.
Add 1/2 cup (125mL) each of chopped celery, carrots, and onions.
Add one 16-ounce (500mL) can of chopped tomates.
Add 1 tablespoon (15mL) of lemon juice. 2 tablespoons (30mL) of Worcestershire sauce. 1 tablespoon of dried basil. 1 teaspoon (5mL) of garlic powder.
1/2 teaspoon (2mL) of black pepper.
Again, simmer for one hour.
Add 1/2 pound (225 grams) of sliced, and sauteed kielbasa and 1 cup (250mL) of cut-up cooked chicken.
Simmer for one more hour.
Serve with parmesan cheese or hot sauce.
