Banana Muffin Recipe

Turn this hearty banana muffin recipe into banana nut muffins by adding 2/3 cup of coarsely chopped walnuts.


1 1/2 cups all-purpose flour
1/2 cup whole-wheat flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1 large egg
3/4 cup light brown sugar, packed
1 1/3 cups mashed ripe bananas (2 to 3)
6 tablespoon vegetable oil
1 teaspoon vanilla

Directions - Banana Muffin Recipe:

Position the rack in the center of the oven. Preheat the oven to 375 degrees. Grease a standard 12-muffin pan or line with paper cups.

In a large bowl whisk together flours, baking powder, baking soda, cinnamon, salt, and nutmeg. Mix thoroughly and set aside.

In large bowl thoroughly whisk together egg, brown sugar, mashed bananas, vegetable oil, and vanilla. Add the flour mixture to the wet ingredients, and mix together with a few light strokes, just until the dry ingredients are moistened. Do not over-mix, the batter should not be smooth.

Divide the batter among the muffin cups. Bake until toothpick inserted in 1 or 2 muffins comes out clean, about 18 minutes. Let cool for 2 to 3 minutes in the pan before removing to cool completely on a rack.

Recipe yields 12 banana muffins.
