Banana Nut Muffin Recipe



This banana nut muffin recipe is very flexible. You can try adding 1/2 cup fruit, or a variety of chopped nuts,
to make inventive and tasty muffins.

Ingredients:

8 tablespoons butter, warm melted
1/2 cup light brown sugar, firmly packed
2 eggs
1/4 cup yogurt
1 1/4 cups mashed ripe bananas
1 cup all-purpose flour
1 cup whole wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon salt
2/3 cup walnuts, coarsely chopped


Directions - Banana Nut Muffin Recipe:

Position the rack in the center of the oven. Preheat the oven to 375 degrees. Grease a standard 12-muffin pan or line with paper cups.

In a large bowl whisk together flours, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix thoroughly and set aside.

In large bowl thoroughly whisk together eggs, brown sugar, mashed bananas, warm melted butter, and yogurt. Add the flour mixture to the wet ingredients, and mix together with a few light strokes, just until the dry ingredients are moistened. Gently and quickly fold in nuts. Do not over-mix, the batter should be lumpy.

Divide the batter among the muffin cups. Bake until toothpick inserted in 1 or 2 muffins comes out clean, about 18 minutes. Let cool for 2 to 3 minutes in the pan before removing to cool completely on a rack.

Recipe yields 12 banana nut muffins.
