2/3 cup toasted wheat bran
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
4 teaspoons baking powder
1 teaspoon salt
1 1/2 cup milk
1/3 cup plus 2 teaspoons honey
1/3 cup plus 2 teaspoons molasses
2 beaten eggs
1 teaspoon vanilla extract
1/2 cup unsalted butter, warm melted
Directions - Bran Muffins Recipe:
Position the rack in the center of the oven. Preheat the oven to 400 degrees. Grease a standard 12-muffin pan or line with paper cups.
Sift flour once. Next, in a bowl whisk together sifted flour, sugar, salt, and baking powder. Set aside.
In a large mixing bowl combine milk and bran. Let stand for 3 minutes, so that bran absorbs milk. Stir in the beaten eggs, melted butter, vanilla, honey, and molasses. Mix well.
Add the flour mixture to the wet ingredients. Mix together with a few light strokes, until the dry ingredients are moistened. Do not over mix - the batter should not be smooth.
Divide the batter among the muffin cups. Bake until toothpick inserted in 1 or 2 muffins comes out clean, about 18 minutes. Let cool for 2 to 3 minutes in the pan before removing to cool completely on a rack.
Recipe yields 18 - 24 bran muffins.
