Cheese Biscuit Recipe

This cheese biscuit recipe is a classic drop biscuit with variation. Crunchy on the outside and cheesy on the inside, these easy biscuits are simply scrumptious!

Ingredients:

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon coarse black pepper
1/4 cup lard or shortening
1 cup milk
1/4 cup grated Cheddar cheese
1/4 cup grated Monterey Jack cheese

Directions:

Position rack in the center of the oven. Preheat the oven to 450 degrees. Lightly grease a large baking sheet and set aside.

In a large bowl whisk together flour, baking powder, salt, and pepper. Cut in the shortening until mixture resembles small peas.

In a separate bowl whisk together milk, and cheeses. Add in milk-cheese mixture to flour mixture, stirring with a fork to make a soft dough. With floured hands knead dough gently 4 times in bowl

Turn biscuit dough onto lightly floured surface. Roll or pat the dough to about 1/4" to 1/2" thick. Cut with a floured 2" cutter. Place the cut-out biscuits about 1" apart on ungreased baking sheet.

Bake in oven until biscuits are golden brown, about 12 minutes. Serve cheese biscuits hot.
