Chocolate Muffins Recipe



Turn these tasty chocolate muffins into double-chocolate muffins by adding 1 cup of chocolate chips.

Ingredients:

2 ounces unsweetened chocolate
1 3/4 cups all-purpose flour
1 teaspoon soda
1/4 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla
8 tablespoons (1 stick) unsalted butter
1 cup light brown sugar, packed
1 large egg 


Directions - Chocolate Muffins Recipe:

Position the rack in the center of the oven. Preheat the oven to 350 degrees. Grease a standard 12-muffin pan or line with paper cups.

Melt unsweetened chocolate. Let cool.

In a medium-sized bowl whisk together flour, baking powder, and salt. Mix thoroughly and set aside.

Combine buttermilk, and vanilla in a small bowl. Mix, and set aside.

In large bowl beat butter until light and creamy. Gradually beat in packed brown sugar. Beat in 1 large egg. Beat in the chocolate until just blended.

Next, add the flour mixture in three parts, alternating with the buttermilk mixture in 2 parts. Stir batter until smooth, scraping down the sides of the bowl as necessary.

Divide the batter among the muffin cups. Bake until toothpick inserted in 1 or 2 muffins comes out clean, 25 to 30 minutes. Let cool for 2 to 3 minutes in the pan before removing to cool completely on a rack.

Recipe yields 12 chocolate muffins.
