Crispy Cucumber Salad Recipe



Cucumber Salad is another way to have that quintessential tea party veggie (cucumbers that is) in the meal... I don't know about you, but I love cukes and I adore this salad!

Ingredients:

4 medium-size cucumbers, peeled and cut crosswise into 1/4-inch rounds
1/4 cup finely chopped yellow onion
4 slices hickory smoked bacon, fried crisp and crumbled
1/2 large firm tomato, diced
1 pint yogurt
2 cloves garlic, peeled and crushed
2 tablespoons olive oil
Juice of 1/2 lemon
1 tablespoon minced fresh mint
2 tablespoons minced fresh dill
Salt to taste
1/8 teaspoon white pepper


Directions - Cucumber Salad Recipe:

Toss cucumbers with a pinch of salt in a colander. Let stand to drain for 30 minutes. Press the excess water out of the cucumbers, rinse quickly, and blot dry. Drain, and gently blot tomatoes, as well, and put aside.

In a large bowl prepare salad dressing. First, mash together peeled garlic cloves and 2 or 3 pinch of salt.  Add yogurt, olive oil, lemon juice, fresh mint and dill, and white pepper. Mix dressing ingredients until blended and creamy.

Add cucumbers, onions, and tomatoes to the prepared dressing. Toss well to mix. Cover and chill several hours.

Pour cucumber salad into a decorative serving bowl, or individual salad bowls. Serve garnished with crisp crumbled bacon and sprinkles of fresh dill.

Recipe yields 6 - 8 servings of cucumber salad.
