Raisin Bran Muffins Recipe

The batter to these raisin bran muffins complements almost any fruit... Try adding 1/2 cup of fresh blueberries for awesome blueberry-cereal muffins!


1 1/4 cup milk
1 1/2 cup raisin bran
1 1/2 cup sifted all-purpose flour
1/3 cup sugar
1 teaspoon salt
3 teaspoons baking powder
1 egg, beaten
1/4 cup vegetable oil 

Directions - Raisin Bran Muffins Recipe:

Position the rack in the center of the oven. Preheat the oven to 400 degrees. Grease a standard 12-muffin pan or line with paper cups.

In a large bowl whisk together flours, baking powder, baking soda, cinnamon, salt, and nutmeg. Mix thoroughly and set aside.

Combine milk and raisin bran in a large bowl. Add egg, and oil to the milk and cereal.  whisk together egg, brown sugar, mashed bananas, vegetable oil, and vanilla. Add the flour mixture to the wet ingredients, and mix together with a few light strokes, just until the dry ingredients are moistened. Do not over-mix, this muffin batter should not be smooth.

Divide the batter among the muffin cups. Bake until toothpick inserted in 1 or 2 muffins comes out clean, about 18 minutes. Let cool for 2 to 3 minutes in the pan before removing to cool completely on a rack.

Recipe yields 12 raisin bran muffins.
