Sunshine Biscuit Recipe



The cornmeal adds a sunny color and beautiful texture to these Sunshine Biscuits!

Ingredients:

1 cup sifted all-purpose flour
1/2 teaspoon salt
1 teaspoon sugar
1/4 teaspoon  baking soda
1/4 teaspoon baking powder
1/3 cup cornmeal
1/3 cup lard
1/3 cup buttermilk
Melted butter

Directions:

Preheat the oven to 450 degrees. Lightly grease a baking sheet and set aside.

In a large bowl sift together flour, sugar, baking soda, salt, and baking powder. Stir in cornmeal. Mix well.

Cut in the lard until flour mixture resembles small peas. Stir in buttermilk to make a soft dough. You may add more buttermilk by the teaspoon to achieve a soft, roll-able dough.

Turn sunshine biscuit dough onto a lightly floured board. Gently gather dough into a rounded ball. Roll out to 1/3" thickness. Cut with 2" cutter. Place biscuits about 1" apart on prepared baking sheet. Bake in oven until golden brown, about 12 to 15 minutes.
