1 Recipe Dessert Crepes - cooked on one side
1 package (8 oz.) cream cheese, softened
Berry Sauce Recipe:
1 package (10 oz.) frozen strawberries, thawed
1/3 cup water
1/3 cup sugar
2 tablespoons cornstarch
1 teaspoon grated lemon peel
1 pint fresh raspberries, washed, hulled and sliced
1/4 cup butter
Directions - Berry Blintz Recipe:
In a small bowl beat cream cheese until light.
Spoon about 1 tablespoons of the cream cheese into the center of the browned side of each crepe. Fold your blintz in thirds (one edge to the center covering the cheese mixture, then the opposite edge to the center - overlapping in the middle). At this point, the blintz will resemble a rolled shape. Next, fold each open end of the blintz to the middle. Blintz should now resemble a square or pocket shape.
Arrange blintzes (seam sides down) in a buttered 13x9x2" baking dish or shallow pan. Broil blintzes about 6 inches from heat until light browned.
Meanwhile, in a blender combine thawed strawberries, water, sugar, cornstarch, lemon peel, and blend until smooth. Pour into saucepan and cook. Stir over medium heat until smooth and thickened. Stir in fresh berries, and butter and heat through. Spoon berry sauce over blintzes to serve.
Recipe yields about 12 blintzes.
