1 can (29 oz.) sliced peaches
1/2 cup sugar
3 tablespoons cornstarch
1/8 teaspoon salt
1 tablespoon lemon juice
1 tablespoon butter
1 recipe Cinnamon-Sugar (see below)
Whipping cream, whipped
Directions - Peach Crepe Recipe:
Drain peaches, reserving 1/2 cup syrup. Set aside.
In a saucepan combine sugar, cornstarch and salt. Stir in reserved peach syrup. Cook and stir over medium-high heat until thickened, about 2 to 3 minutes. Stir in reserved peaches, lemon juice and butter. Continue cooking until hot and bubbly.
Spoon about 2 tablespoons peach mixture into center of each crepe. Fold 1 side up over filling. Tuck ends in. Complete rolling with remaining side.
Sprinkle finished crepes with Cinnamon-Sugar and dollop with whipped cream.
Cinnamon-Sugar Recipe: Combine 1 1/2 teaspoons cinnamon with 1/4 cup sugar.
Recipe yields about 16 crepes.
