A blintz recipe is the nothing more than the Jewish version of the crepe. However, there are a few differences.
First, instead of rolling the crepe around the filling, blintzes hold the savory filling in a pocket shape. Traditionally the filling for blintzes are cottage cheese and sour cream based.
Another difference between crepe and blintz recipes is that in a blintz the filling goes on the browned side, and the un-browned side is exposed. In crepe recipes the opposite is true.
Despite the differences, both blintzes and crepes are as versatile as they come. They can be filled with anything from fruit, to meat and cheese and everything in between!
